“Berdamai: A Briyani Feast”
Berdamai refers to a malay custom of eating together from a large tray where rice and various dishes are heaped on, with the noble intention of breaking down barriers between class & status as well as building stronger bonds.
The root word “damai” means “peace”, and it is with this concept that Chef Zahid’s briyani feast is based on – food being inclusive instead of divisive, a conduit of brokering peace between conflicting parties, friendship between strangers & love for one and all.
While his signature rice dishes are an expected staple of his repertoire, the accompanying dishes for this exclusive dinner are interpretations of old favourites; a respectful nod to the traditions of old with a mischievous wink to the endless possibilities of the future.
