Chef Zahid’s love for food started in the kitchen of his maternal home where his grandaunt and mother would prepare very homely dishes; the sight of the two women (who shared not only a bond as aunt & niece but also as kitchen master & student) working seamlessly to put together a meal for the family was something that hinted at things to come.
It was also during those early years that cooking shows on TV were the ones which fascinated him most. The concept that from plain, raw ingredients, something grand & extravagant could be produced amazed him & this quiet obsession with the culinary arts finally manifested itself physically when at the age of 38, Chef Zahid took his very first step to realising his dream of becoming a chef by joining the Coriander Leaf restaurant, whom he is still with today.
Besides his regular day-job, the cult-following Instagram account “Global Mat Soul Kitchen” was something that was borne out of a personal need to express himself creatively outside of the paradigm of being a mere service kitchen chef. Harnessing the feel, aura & do-it-yourself work ethic of the underground music that he grew up with & still listens to, GMSK is a chaotic explosion of colour & noise, inane story-telling & frenzied emotions running amok as he peddles his signature briyani that have somehow become a hit with people.
By sheer luck, force of will and the grace of God, Chef Zahid has managed to use Instagram as a platform to do something different and get to this point. A very strange culinary journey is about to take an even stranger twist as Chef Zahid prepares to host “A Celebration of Briyani by #GlobalMatSoulKitchen”; his first exclusive dinner (paired with exquisite non-alcoholic elixirs of his own design) & given the memorable nature of his still-unfolding story, probably not his last.
