Joeri Timmermans is the Head Chef at Blackwattle. Having opened Automata in Sydney with Clayton Wells two years ago, the pair are using their experience working across Europe and in Australia to transform the Singaporean dining scene with Blackwattle. At Blackwattle, Clayton and Joeri bring a taste of Automata to Singapore. The restaurant features evolving three and five-course tasting menus to move the freedom and energy from the kitchen into the dining room. Bold flavours and a unique, unfussy style characterise Blackwattle.
Beginning his career in the Netherlands, Joeri worked for several Michelin starred restaurants, including Restaurant Parkheuvel, Beluga and Restaurant de Leuf. In 2013, Joeri moved to Australia and began working as junior sous-chef at Momofuku Seiōbo, where Clayton Wells was sous-chef.
With Chef Clayton Wells planning to split his time between Sydney and Singapore, Joeri will work as Head Chef of Blackwattle. Having cooked side-by-side for several years, the pair have developed a dynamic, progressive working style enabling them to work together to develop the vision for Blackwattle.
