Chef Leong Chee Yeng joined The Fullerton Hotel’s Jade restaurant as Chef de Cuisine in September 2007. As head of the modern Chinese restaurant’s culinary team, Chef Leong oversees all aspects of the kitchen, from culinary direction to operations management and training, as well as handling wedding banquets at the luxury hotel. The renowned restaurant, which reopened under the hotel’s management in January 2008, features a brand new menu of Chef Leong’s signature dishes of traditional flavours with modern presentations.
Prior to joining The Fullerton, Chef Leong was Chinese Executive Chef of the highly acclaimed Zheng He’s restaurant at Mina A’ Salam at the Madinat Jumeirah resort in Dubai, since 2003. The restaurant has been featured in the respected US travel publication, Condé Nast Traveler, and was also voted ‘Best Chinese Restaurant’ in Time Out Dubai’s Restaurant Awards in 2006 and 2007.
Through the years, Chef Leong has acquired extensive experience at a number of Chinese dining establishments, focusing on Cantonese specialties and the cuisines of Beijing, Shanghai, Teochew and Szechuan. Some of the restaurants include Hai Tien Lo at Pan Pacific Singapore where he worked for three years and Summer Palace at The Regent Singapore as Sous Chef for five years. He also served as Chinese Chef at Meritus Mandarin Singapore’s Pine Court Chinese Restaurant from 1998 to 2002, and was Executive Chef at Tung Lok Group’s Imperium Chinese Dining for a year.
During the course of his career, Chef Leong has garnered numerous accolades and won scores of medals in culinary competitions. In 2006, he won Gold in both the ‘New Asia Cuisine’ and ‘Pastry Showpiece’ categories at Food and Hotel Asia’s Culinary Challenge. Chef Leong also authored a hardcover cookbook during his tenure at Zheng He’s in Dubai, immortalizing his signature dishes in print.
Chef Leong, who was raised in Malaysia, is married with two children. Possessing a deep appreciation for the arts, he counts ceramic making and Chinese painting among his hobbies
